Importance of food combining (part 1)
Carbohydrate ~Is a combination of simple sugars (glucose) bonded by the glycocilic bond. By breaking the glycocilic bond (carbo → glucose), energy is released. At this stage, alkaline pH (pH > 7) is needed.
Why carbo is important? Our brain and nervous system only get energy from glucose. And our blood sugar level has to be always constant. A person can die if the glucose level too low due to brain malfunctioned.
Protein ~
Is composed from various proportions of about 20 common amino acids which is highly complex structured. Our body transform protein to needed amino acides via asimilation process. This process needs acidic environment, which is about pH +/- 2.0.Fats ~
Made up of fatty acids and bonded to backbone structure, glycerol. Needed alkaline environment to digest. The process start from mouth and some in small intestinal. (That's why if intestinal cut, will not able to digest fats, protein & starch properly.)
The process of fats digestion is called emulsify, to surface the fats with water so that it can be transported around the body in the blood, which is a water based substance.
The Importance of Food Combination
Most of the time, our single meal consists various type of foods. Let's see what will actually happen when we first put in food to our mouth.
When carbo go into body, our body will start produce alkaline environment to digest it. This process start from mouth until the stomarch. However, if protein go in at the same time, our body will produce more acid to break the protein. In this case,
Acid + Alkaline = Neutralized
When food being neutralized in stomarch, our body will try to produce even more acid to do work. This acidic environment will even burn the stomarch cell wall, and eventually become ulcer when the condition become worst. The acid produced here has about pH +/- 2.0, which enough to burn our body. Thus, people who has stomarch ulcer is not recommended to take both protein and carbo at the same time.
Example: chicken rice / tuna or egg sandwich ->> carbo + protein
Besides, Protein will also take longer hours to break, especially meats. In this case, carbo (need shorter time to digest) that taken together will ferment and produce gases. The gases will be stored at upper part of the stomarch. That is why most of us burb a lots after we finish the 'comprehensive' meal.
Food transit time in stomarch:
Carbo = 0.5 – 1 hour
Protein = 3 – 4 hours
Fat = 5 > hours
